pistacchio cookies 🍪💚

INGREDIENTS 📝 (8 cookies)

  • 125gr. butter (room temperature) 🧈

  • 200gr. flour

  • 80gr. brown sugar

  • 60gr. white sugar

  • 1 tsp corn starch

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 150gr. milk chocolate 🍫

  • 150gr. white chocolate 🍫

  • 100gr. dark chocolate 🍫

  • 100gr. pistacchi

  • 1 egg 🥚

  • 1/2 tsp vanilla

  • pistacchio butter

METHOD 👩🏻‍🍳

  1. Beat butter until pale and fluffy. Add white and brown sugar, beat until combined. Then add egg and vanilla and beat until combined.

  2. Add the flour, corn starch, baking powder and soda, fold with a spatula until flour dissappears.

  3. Add chocolate and mix with hand.

  4. Make balls, flat them and add in the middle a spoon of pistachio butter, roll the dough and batter the ball into the remaining dust of chocolate and pistacchi.

  5. Refrigerate for 24-48h.

  6. Preheat oven at 200º and bake for 10 min.
